Are you a fan of coconut, almonds, chocolate or great wine? How about all of them combined? Our recipe for homemade Chocolate-Dipped Almond Macaroons (recipe compliments of Terri Prosperi) is a guaranteed favorite for macaroon fans. Paired with our Deviation, this combination serves as a unique and spectacular tasting experience.

Deviation Dessert Wine – to enjoy with the macaroons!

Ingredients – Macaroons

21 oz. (7 cups) flaked coconut

2 cups thinly sliced almonds

14 oz. (1 can) sweetened condensed milk

1 tsp. almond extract

4 large egg whites

½ tsp. kosher salt

Sea salt

Ingredients – Chocolate Dip

2 cups semi-sweet chocolate chips

4 tsp. vegetable shortening

Step-by-Step Recipe:

Preheat oven to 350. Line two baking sheets with parchment paper.  Combine 3 cups of the coconut and all of the almonds and spread evenly in the two prepared baking pans. Toast, stirring occasionally, until golden, about 13 minutes.  Transfer immediately to a bowl and let cool. Leave the oven on.

In a bowl, combine the cooled coconut mixture, remaining untoasted coconut, condensed milk, and almond extract. In another bowl, using an electric mixer on high speed, beat the egg whites and ½ tsp. kosher salt until soft peaks form.  Using a rubber spatula, gently fold the egg whites into the coconut mixture.

Using a large spoon, drop the dough into mounds, about 2 inches in diameter, gently shaping each one with your fingers, on baking sheets lined with parchment paper, spacing them two inches apart. Lightly sprinkle each cookie with sea salt.  Bake the cookies until golden brown, about 10 minutes. Transfer to wire racks and allow to cool completely.

Line the two baking sheets again with parchment paper. In a double boiler, melt the chocolate and shortening together until smooth. Or, if preferred, microwave the chocolate and shortening together, stirring occasionally until melted. Dip half of the cookies into the chocolate coating and transfer, to the prepared baking sheets. Refrigerate the cookies until the chocolate is set.

MAKES ABOUT 3 DOZEN COOKIES

Store in an airtight container in the refrigerator.
