Chocolate is a love language as far as we’re concerned, and this Triple Chocolate Port Wine Cake is the way to any chocolate lover’s heart. Our recipe combines the rich chocolate-raisin taste of Starboard Batch 88 with even more chocolate baked in for a flavor match made in heaven. Serve this decadent, velvety Triple Chocolate Port Wine Cake topped with berries and a side of Starboard for the sweetest dream come true.

3 oz. unsweetened baking chocolate
1 cup sugar
3 eggs – whites and yolks separated
½ cup butter
¾ cup flour
1/8 tsp. salt
8″ round cake tin

Chop baking chocolate into smaller pieces to aid in quicker melting process. Do the same for butter.

In a small saucepan, bring Starboard port wine to boiling point. Reduce heat immediately to warm and add butter and baking chocolate to melt. Cool.

In one bowl, beat egg yolks and sugar until well blended. In another bowl, beat egg whites and salt until stiff (about 5 minutes or more depending on your blender speed and process).

In a large mixing bowl, add flour alternately with the cooled chocolate port wine mixture in about 3 parts, blending thoroughly. Fold the egg yolks and sugar mixture into the batter, then the stiffened egg whites, gently and thoroughly mixing.

Bake in a well-greased 8” round cake tin at 325 °F for about 30 minutes. Remove from oven and allow to cool enough to the touch, then remove the cake from tin and allow to finish cooling on a rack.

Due to the richness of this Triple Chocolate Port Wine Cake, no icing or frosting is necessary, but it is indeed good showmanship! Dust with powdered sugar and top with fresh berries top for a fantastic flavor match, even adding whipped cream if you like.
