1/2 cups baby kale
1 tbps heavy cream
1 tbps shredded parmigiana-romano cheese
coconut oil cooking spray
1. Preheat oven to 400 degrees. Spray your ramekin with coconut oil cooking spray and place on a baking sheet.
2. Place kale in the ramekin.
3. Crack eggs on top of kale.
4. Top with heavy whipping cream and parmigiana-romano cheese. Salt and pepper to taste.
5. Bake for twenty minutes. Allow cooling before serving.
