Ingredients:
1 tablespoon olive oil
1 small red onion, sliced
1/4 tsp salt
1/4 tsp black pepper
14 ounces store-bought fresh pizza dough
6 figs, thinly sliced crosswise, divided
8 ounces goat cheese, crumbled
1/4 cup balsamic vinegar
1/4 cup Quady Elysium
1 cup loosely packed arugula
Step 1
Preheat oven to 450°F. Heat oil in a saucepan over a medium flame. Add red onion and the salt and pepper. Stir for 2 minutes, or until tender.
Step 2
Line a large baking sheet with parchment paper. Roll pizza dough into a 1/4-inch-thick, 17- x 11-inch rectangle. Sprinkle with salt and pepper. Top 1/3 of the fig slices, the cooked onions, and goat cheese. Bake for 15 to 20 minutes, or until crust is lightly browned.
Step 3
In a small saucepan, cook Quady Elysium and the balsamic vinegar over medium-high until reduced by half, about 5 minutes. Top flatbread with the remaining figs, arugula, and balsamic reduction.
