We often hear in our tasting room Red Electra “tastes like a bowl full of cherries” so we decided to try a pairing with a bowl of cherries, covered in chocolate (and a few other delectable items)! Try this easy, fun recipe that everyone will love.
1 box devil’s food cake mix
1 1/4 cups water
1/2 cup vegetable oil
3 eggs
1/4 cup white frosting
30 – 48 maraschino cherries with stems
2 cups semisweet chocolate chips
2 tbls shortening*
Preheat oven to 350° degrees. Blend cake mix, water, oil, and eggs in a large mixing bowl until moistened. Pour batter into prepared pan and bake according to cake instructions. Cool cake completely.
Drain Maraschino Cherries, pat dry with a paper towel. Crumble cooled cake into a large mixing bowl. Add frosting and mix until combined. Scoop a heaping tablespoon of mixture out and roll into a ball. Press one cherry into the center of each cake ball. Bring the cake mixture up and around the cherry. Roll in between your two hands to form a nice ball. Melt chocolate chips and shortening by microwave or double boiler. Dip cake covered cherries in chocolate. Set on a parchment paper lined baking sheet. Refrigerate until set, about 10 minutes. Serve with chilled Red Electra!
*Shortening creates a smoother and more manageable consistency than melted chocolate alone and gives the finished product an even coat.
