A Delicious Easter Recipe from the Quady Family to Yours!

Have you heard of an Abelskever? If so, you know that you are in for something delightful and if you aren’t familiar with this tasty treat, you are in for a wonderful surprise!
An Abelskever is a Danish pancake, round and hollow inside and made in a special pan. Wikipedia’s definition is: Æbleskiver “Pancake Puffs”, also called “appleskives” are traditional pancakes in a distinctive shape of a sphere. The name literally means apple slices in Danish, although apples are not usually an ingredient in present-day versions. TIP: when searching for the pan, search by “Ebelskiver” as this is the most common English spelling.
Allie Quady, daughter of Quady Winery founders, Andrew and Laurel, selected this recipe when asked about a traditional Easter dish that she enjoys. Allie shared, “My mom got the recipe from her mom. Abelskevers are delicious filled with jam, butter or maple syrup.”
Laurel Quady has fond memories of this recipe as well. “Growing up, my Mom would make these for special occasions and frequently fill them with sliced apples, or other fruits and sometimes jam.”
Abelskever Danish Pancake Recipe
Combine in a bowl and set aside:
2 eggs whipped
1 1/4 cups milk
Combine the following ingredients in a second bowl and then sift into above egg and milk mixture:
1 1/4 cups flour
4 t baking powder
1/2 tsp salt
3 tsp sugar
1/2 tsp cardamom
2 tbs melted cooled butter
Stir briefly, enough to combine, but do not over mix. Coat depressions in Ableskiver pan with butter & heat on medium high (do not burn the butter).
Fill depressions 2/3 full. Keep warm on a platter until all batter is used up.
Using the tip of an ice pick or fork, as the batter cooks rotate the Abelskivers upside down to form a round ball.
Serve with powdered sugar, maple syrup, fruit, butter, favorite jam, etc. This sweet treat pairs beautifully with Electra Moscato.
