This is delicious paired with Vya.

1 clove garlic, chopped
1 3/4 cups whole, pitted Kalamata olives
1 anchovy fillet, rinsed
2 Tbsn. capers
1 tsp. thyme, chopped, fresh
1 tsp. parsley, chopped, fresh
3 Tbsn. lemon juice
1 tsp. lemon zest
6 Tbsn. olive oil
1/8 tsp. white pepper

Combine all ingredients in a food processor and mix until desired consistency. Slowly add oil to coat. Chill and serve with crackers, french bread or toasted baguette.
